Edamame Dip

Move over, hummus! There’s a new heart-friendly dip that’s creamy, flavorful, and the perfect partner for sliced veggies and whole-grain crackers.

Edamame Dip isextra-creamy thanks to the Greek yogurt base. Seasoned with garlic, parsley, and lemon, this dip packs tons of flavor without salt. Edamame are young soybeans popular in East Asia that provide almost 9 grams of plant-based protein and 4 grams of fiber per ½ cup. Remember to aim for a minimum of 25-30 grams of fiber per day to help reduce blood pressure and cholesterol levels and minimize inflammation.

Ingredients

  • ¾ cup shelled edamame, thawed if frozen
  • ½ cup plain Greek yogurt
  • ½ cup loosely packed fresh parsley leaves
  • 1 garlic cloves
  • ¼ cup olive oil
  • Juice from ½ lemon
  • ¼ tsp. cumin
  • ¼ tsp. black pepper
  • Pinch of red chili flakes

Directions

    1. To a high-powered blender add edamame, Greek yogurt, parsley, garlic, olive oil, lemon juice, cumin, black pepper, red chili flakes and 2 Tbsp. water. Blend until smooth. You may need to pause to scrape down the sides of the container.
    1. Transfer to a bowl and serve with cut up vegetables. Enjoy!
