Ingredients

  • ½ Tbsp. olive oil
  • 1 pint sliced mixed mushrooms, like button and shiitake
  • ¼ tsp. smoked paprika
  • ⅛ tsp. garlic powder
  • ⅛ tsp. salt
  • ⅛ tsp. black pepper
  • 4 slices high-fiber whole grain bread
  • ½ cup ricotta cheese
  • 2 tsp. chopped chives

Directions

    1. Heat oil in a skillet over medium-high heat. When the oil is hot, add the mushrooms, sautéing until softened, about 5 minutes. Season with smoked paprika, garlic powder, salt, and pepper. Continue to sauté until cooked through, about another 3 minutes.
    1. Toast the bread until desired doneness.
    1. Divide the ricotta cheese to spread atop each slice of bread. Divvy up the mushrooms on top. Garnish with chives.
