Ricotta Toast With Sautéed Mushrooms

Ingredients
- ½ Tbsp. olive oil
- 1 pint sliced mixed mushrooms, like button and shiitake
- ¼ tsp. smoked paprika
- ⅛ tsp. garlic powder
- ⅛ tsp. salt
- ⅛ tsp. black pepper
- 4 slices high-fiber whole grain bread
- ½ cup ricotta cheese
- 2 tsp. chopped chives
Directions
- Heat oil in a skillet over medium-high heat. When the oil is hot, add the mushrooms, sautéing until softened, about 5 minutes. Season with smoked paprika, garlic powder, salt, and pepper. Continue to sauté until cooked through, about another 3 minutes.
- Toast the bread until desired doneness.
- Divide the ricotta cheese to spread atop each slice of bread. Divvy up the mushrooms on top. Garnish with chives.
